Tomato & Almond Pesto

Tomato & Almond Pesto

SERVES 4 | FINISH IN 20 minutes
   


Ingredients
  • 1 Box Veggiecraft Penne
  • ½ cup pasta water
  • 12 ounces cherry or grape tomatoes, halved
  • ½ cup fresh basil leaves
  • ½ cup parmesan cheese, grated
  • ¼ cup sliced almonds
  • 1 small pepperoncini, stemmed, seeded, and minced
  • 2 cloves garlic, minced
  • 1/4 cup extra-virgin olive oil
  • Sliced Almonds, for garnish
  • Quartered tomatoes, for garnish
Directions
  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package directions. Reserve ½ cup of the pasta water before draining.
  2. n a food processor, pulse tomatoes, basil, parmesan, almonds, pepperoncini, and garlic.
  3. Add the oil and process until smooth.
  4. Toss the pesto with the pasta, add the pasta water as necessary if the pesto is thick.
  5. Garnish with almonds and diced tomatoes.
