Beet Pasta

SERVES 4 | FINISH IN 30min
   


Ingredients
  • 1 box Veggiecraft Spaghetti
  • 1 tablespoon extra virgin olive oil
  • 2 shallots, sliced
  • 2 medium cooked, peeled beets
  • 4 ounces feta, goat cheese, or cottage cheese
  • 1/2 cup grated parmesan cheese
  • 1 clove garlic, minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • Garnish: pistachios, parsley, parmesan
Directions
  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions. Reserve ½ cup water before draining. Transfer the pasta to a large bowl.
  2. In a small pan, heat the olive oil over medium heat. Add the shallots and sauté for 4 minutes until soft.
  3. Transfer the shallots to a blender. Add the beets, feta, parmesan, garlic, salt, and pepper. Blend until smooth, adding ¼ to ½ cup of pasta water to create smooth sauce.
  4. Pour the sauce over the pasta and toss well.
  5. Serve with a garnish of pistachios, fresh parsley, and parmesan.
