Chili Oil & Garlic Butter Pasta

SERVES 4 | FINISH IN 25 minutes
   


Ingredients
  • 1 box Veggiecraft Spaghetti
  • 2 tablespoons chili oil, plus more for garnish
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons soy sauce
  • 2 tablespoons butter
  • 2 small zucchini, sliced and quartered
  • 6 cloves garlic, minced
  • ½ cup grated parmesan cheese, plus more for garnish
  • ¼ cup minced scallions, plus more for garnish
Directions
  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package directions. Reserve ½ cup water before draining.
  2. In a small bowl whisk the chili oil, honey, and soy sauce.
  3. Heat the butter in a large skillet. Add the zucchini and sauté until soft. Add the garlic and cook for 30 seconds more.
  4. Add the cooked pasta, chili oil sauce, parmesan, and scallions to the skillet. Toss well.
  5. Serve with a garnish of parmesan, scallions, and chili oil.
