Vodka Pasta

Ingredients
  • 8 ounces Veggiecraft Penne
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/3 cup tomato paste
  • 1 tablespoon vodka
  • 3/4 cup heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup freshly grated parmesan
  • 1 tablespoon butter
  • For garnish: basil, parmesan, red pepper flakes
Directions
  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions. Reserve ½ cup pasta water before draining.
  2. Heat the olive oil in a large skillet over medium heat. Add the garlic and tomato paste and cook for 3 minutes.
  3. Add the vodka. Heat for 1 minute to cook off the alcohol.
  4. Add the heavy cream, salt, pepper, and red pepper flakes. Bring to a simmer and cook for 2-3 minutes.
  5. Add the parmesan, butter, and ¼ cup pasta water and stir well. Add more pasta water to thin the sauce as desired.
  6. Garnish with fresh basil and more parmesan or red pepper flakes, if desired.
