Arugula Salad with Stone Fruits

SERVES 4-6 | FINISH IN 25 minutes

  • 1 Box Veggiecraft Farms Cauliflower Rotini
  • 1 Cup Chickpeas
  • ¼ Cup Organicville Italian Dressing
  • 2 Peaches or Nectarines, halved, pitted, and thinly sliced
  • 2 Cups Cherries, pitted and halved
  • 1 Small Fennel Bulb, halved, cored, and cut into thin slivers (1½ cups)
  • 2 Cups Fresh Baby Arugula
  • Sea Salt, to taste
Products you'll need
  1. Cook the pasta according to the package directions. Drain and rinse under cold water.
  2. In a bowl combine pasta, fruits, fennel, and arugula. Toss to combine.
  3. Drizzle with the Organicville dressing. Season with salt as desired.
