Arugula Salad with Stone Fruits
SERVES 4-6 | FINISH IN 25 minutes
Ingredients
- 1 Box Veggiecraft Farms Cauliflower Rotini
- 1 Cup Chickpeas
- ¼ Cup Organicville Italian Dressing
- 2 Peaches or Nectarines, halved, pitted, and thinly sliced
- 2 Cups Cherries, pitted and halved
- 1 Small Fennel Bulb, halved, cored, and cut into thin slivers (1½ cups)
- 2 Cups Fresh Baby Arugula
- Sea Salt, to taste
Directions
- Cook the pasta according to the package directions. Drain and rinse under cold water.
- In a bowl combine pasta, fruits, fennel, and arugula. Toss to combine.
- Drizzle with the Organicville dressing. Season with salt as desired.
