Breakfast Pasta

Ingredients
  • 1 box Veggiecraft Elbow
  • ¼ cup butter
  • 2 large eggs
  • 1 cup shredded cheddar/mozzarella cheese
  • Everything but the bagel seasoning

Directions
  1. Cook the pasta according to package directions, until al dente.
  2. Remove the pot from heat. Reserve ¼ cup pasta water, then drain the rest of the water from the pot.
  3. Add butter to the pot, then add the drained pasta back to the pot and stir to coat.
  4. Crack the eggs into a small bowl and whisk well.
  5. Add the eggs to the pasta and stir quickly to coat the pasta. If needed, turn the heat back on low to cook the egg completely.
  6. Add the cheese and stir until melted.
  7. Serve with a generous sprinkle of everything bagel seasoning.
