Chicken Rotini Noodle Soup

SERVES 8-12 | FINISH IN 40 minutes

  • 1 Tablespoon Olive Oil
  • 1 Medium Onion, small diced
  • 4 Stalks Celery, sliced
  • 3 Medium Carrots, sliced
  • 3 Cloves Garlic, minced
  • 1 Bay Leaf
  • 2 Tablespoons Roughly Chopped Fresh Parsley, plus more for garnish
  • 1/2 Teaspoon Salt
  • ⅛ Teaspoon Black Pepper
  • ¼ Teaspoon Litehouse Freeze Dried Sage
  • 12 Cups Chicken Stock
  • 2 Boxes Veggiecraft Cauliflower Rotini
  • 3 Cups Shredded Rotisserie Chicken
Products you'll need
  1. Heat the oil in a large pot over medium heat. Add the onion, celery, carrots, garlic, bay leaf, parsley, salt, pepper, and sage. Cook for 5-7 minutes, until the vegetables are starting to soften.
  2. Add the chicken stock to the pot and bring to a boil.
  3. When the stock is boiling, add the pasta and cook according to package directions.
  4. Add the chicken when there is about 2 minutes left for the pasta to cook.
  5. Serve with a garnish of fresh parsley.
