Pumpkin Pasta

Ingredients
  • 1 Box Veggiecraft Cauliflower Rotini
  • 2 Tablespoons Butter
  • 2 Tablespoons Litehouse Freeze Dried Sage + more for serving
  • 2 Tablespoons Litehouse Freeze Dried Garlic
  • ½ Cup Milk
  • 8 Ounces Pumpkin Puree
  • ½ Cup Shredded Cheddar Cheese
  • ¼ Cup Grated Parmesan Cheese + more for serving
  • ½ Teaspoon Salt
  • ¼ Teaspoon Pepper

Directions
  1. Cook the pasta according to the package directions. Drain and set aside.
  2. Heat the butter in a large pot over medium heat. Add the garlic and sage. Cook 2 minutes.
  3. Add the milk and pumpkin puree. Cook, whisking occasionally, until the sauce thickens enough to coat the back of a spoon, about 3 minutes.
  4. Add the cheeses, salt, pepper, and cooked pasta, and stir to combine.
  5. Turn the heat to medium low, and cook, stirring constantly, for 5-7 minutes.
  6. Remove from the heat and serve immediately with an extra sprinkle of parmesan and Litehouse Freeze Dried Sage.
