Vegan Mediterranean Pasta Salad

  • 8 oz. Veggiecraft Rotini, uncooked
  • ½ c. artichoke hearts, roughly chopped
  • ½ c. sundried tomatoes, roughly chopped
  • ½ c. green olives, sliced or whole
  • ½ c. kalamata olives, sliced or whole
  • ½ red onion, thinly sliced
  • 2 tbsp. fresh basil, chopped
  • 1/3 c. extra virgin olive oil
  • ¼ c. balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tsp. Dijon mustard
  • Salt and pepper, to taste
Products you'll need
  1. Cook the Veggiecraft Rotini according to the package directions. Drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the cooled pasta, artichoke hearts, sundried tomatoes, green olives, kalamata olives, red onion, and fresh basil.
  3. In a medium mixing bowl, whisk the extra virgin olive oil, balsamic vinegar, garlic, Dijon mustard, salt, and pepper.
  4. Pour the vinaigrette over the pasta mixture and toss to evenly coat.
  5. Refrigerate for 1 hour.
