Vegan Mediterranean Pasta Salad

Ingredients
- 8 oz. Veggiecraft Rotini, uncooked
- ½ c. artichoke hearts, roughly chopped
- ½ c. sundried tomatoes, roughly chopped
- ½ c. green olives, sliced or whole
- ½ c. kalamata olives, sliced or whole
- ½ red onion, thinly sliced
- 2 tbsp. fresh basil, chopped
- 1/3 c. extra virgin olive oil
- ¼ c. balsamic vinegar
- 2 cloves garlic, minced
- 1 tsp. Dijon mustard
- Salt and pepper, to taste
Directions
- Cook the Veggiecraft Rotini according to the package directions. Drain and rinse under cold water to stop the cooking process.
- In a large mixing bowl, combine the cooled pasta, artichoke hearts, sundried tomatoes, green olives, kalamata olives, red onion, and fresh basil.
- In a medium mixing bowl, whisk the extra virgin olive oil, balsamic vinegar, garlic, Dijon mustard, salt, and pepper.
- Pour the vinaigrette over the pasta mixture and toss to evenly coat.
- Refrigerate for 1 hour.
